Chocolate mint pie

This is a family favorite, but not an easy one to make, it takes alot of beating but it is worth it!!!!  This recipe uses raw eggs, if you don't like the idea of using uncooked eggs, you won't want to try this!!!!

1 1-oz. square unswetened chocolate (or use the premelted kind)
1/2 cup margarine, creamed
1/2 cup sugar
1 tsp. vanilla
2 eggs
1 pie shell (graham cracker crust is awesome for it)
topping:  regular coolwhip, fold in mint extract slowly and carefully, or it reduces the cool whip to nothing)

Melt chocolate over hot water (unless using the melted stuff). Cream margarine and sugar; add vanilla. Add chocolate and eggs, beating 5 minutes after each addition; turn into pie shell and refridgerate 1 to 2 hours.


That's it, it is awesome, just takes alot of time beating it. It is WELL worth the effort. Might as well make two, it will be gone quickly!

You only posted that because you just made it.  LOL....yummy by the way.  I can never get it just right.

  Yep, I kinda figured if I put up the recipe, I'd better make it or Ry would be .............Ry.  Grin Yes, mine WAS quite tasty too!!! Embarrassed
