EASY NOODLE BAKE

Vegetable cooking spray
3/4 c. fresh mushrooms, sliced
1 clove garlic, minced
2 1/2 c. cooked med. noodles made without egg yolks, cooked without salt   
3/4 c. nonfat sour cream
2 tbsp. green onions, chopped
2 tbsp. fresh parsley, chopped
1 tbsp. pimento, diced
1/4 tsp. Salt
1/4 tsp. Pepper
1 tbsp. grated Parmesan cheese

Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.  Add mushrooms and garlic; sauté until mushrooms are tender.  Remove from heat; add noodles and next 6 ingredients, stirring gently.  Transfer mixture to a 1-quart casserole coated with cooking spray; top with cheese.  Cover and bake at 350F for 20 minutes or until thoroughly heated; uncover and bake 5 minutes or until cheese is browned.   Yield:  6 servings (1/2 c serving)
