I've decided to master a new skill -- bread baking.
I have America's Test Kitchen's Bread Illustrated as well as a number of other, lesser known bread recipe books, some dating back decades. I've just ordered a set of 2 Pullman Loaf pans -- selected "best" by America's Test Kitchen -- for my experiments. I already bake a lot so we'll see how fast I can get up to speed with baking bread. Skywise is rather particular about French and Italian loaves so once "regular" bread is mastered, I'll be working on those.

I refuse to buy a stand mixer with a dough hook just to make bread. Aside from the cost, there is nowhere in my dinky kitchen to put one!  Smiley

My sister-in-law called again. It seems she has a brand new, never used bread machine she doesn't need and asked if I could use it. I said "yes" of course. Skywise will pick it up tomorrow after the meeting.

Skywise has the bread machine in the car. Moonie and I will study the instructions and start getting into trouble!

The bread machine is a Hamilton Beach Model 29882 and it's currently sitting on the workstation. I'll be keeping it next to the sink but not before I make a cover for it and figure out how to elevate it a bit so that any water splashed on that side of the sink will flow under it rather than on it. And, of course, I have to figure out what to do with what was sitting in that spot. Smiley
I hate having such a dinky kitchen...... More Smiley

The problem with America's Test Kitchen's Bread Illustrated is that is assumes that you have or can get a stand mixer with a dough hook as well as a "pizza stone" and a "pizza peel" along with other esoteric equipment and it doesn't have any "alternate" instructions if you don't have those things. Other contemporary bread recipes have the same requirements as well as requiring special yeasts and flours.
Have I mentioned that I have a dinky kitchen and limited storage space? I thought I had.
Fortunately, I have cookbooks dating back to the 1970s -- well before the advent of bread flours, bread yeasts and pizza stones for home use. So I have a number of "old fashioned" recipes for making bread the "low tech" way to choose from which I'll use.
I'll also use the bread machine once I figure out the directions. I can understand why they confused my sister-in-law! Not the clearest instructions I've ever read I'm sorry to say.

I've spent the evening gathering bread recipes from the internet and edited them for inclusion in my personal cookbook.
I'm up to 37 pages of recipes for breads, rolls -- including sandwich rolls -- and biscuits.  Smiley
And I haven't even started transcribing recipes from my various cookbooks although a couple of recipes I copied off the internet might be in one of the cookbooks.

Yesterday, I dug out my loaf pan that I haven't used in years for bread or anything else and found RUST!  Smiley Since it has a non-stick coating on it, I couldn't polish it off. So a trip to Walmart today was in order. I bought two Wilton loaf pans -- a little expensive but heavy and with proper care should last indefinitely. Now all I need to do is narrow down the choices for my first bake....  Smiley

Today I bought the biggest Wilton cookie/baking sheet I could find. It is only slightly smaller than my oven's racks. Not only will I be able to bake an enormous number of cookies at one time, it is big enough for respectably sized loaves of French or Italian bread or a lot of sub rolls or other sandwich buns.
