Diabetic Chocolate Truffles

CHOCOLATE TRUFFLES

3 eggs
1/4 cup water
2 tsp. of almond extract
30 pkg artificial sweetener
1 1/4 cups of bread
1/2 cup of cocoa

Beat eggs, water, and extract together they are lemon colored and thick.  Gradually add in sweetener.  Grind up bread in a blender until it is finely chopped. Mix in cocoa. Fold this into the egg mixture. It will be very thick; but this is good, because it makes it easier to roll. Using a teaspoon full of this mixture, shape into small balls.  Let these balls lay out on wax paper until the outsides dry out.  This will make about 42 small balls.

Only 69 Calories per serving of three truffles = 1 bread exchange

Two other suggestions for truffles:  Try making these truffles using 1 tsp. Rum extract or 1 tsp. Orange extract instead of the almond extract.  Or try 2 tbsp of Kahula as a replacement. It gives it a really nice chocolatey flavor too.  These three versions that make a great selection of truffles to choose from.
