This is out of the Joy of Cooking.  It's very tasty, versatile, and simple - my three favorite qualities in a recipe! lol

Ham Noodles

3 cups cooked noodles
3/4 cup diced or ground ham
1 1/2 cups milk
1 or 2 eggs
1/4 tsp paprika
1/4 to 1/2 tsp salt (omit if the ham is very salty)
bread or cracker crumbs
Optional:
1/2 cup shredded cheese (can use more if desired)
1/2 cup shredded green pepper & diced celery

Preheat oven to 350F.  Grease a 9" x 13" baking dish.  Layer the noodles with the ham (and cheese & peppers, if using).  In a separate bowl, combine the milk, egg, paprika, and salt.  Pour it over the noodles and ham.  Cover all with bread crumbs.  Bake for 30-45 minutes or until done.  Makes 6 servings. 

I didn't have any noodles, so I used macaroni & mixed instead of layering - works just as well.  I've also added a (drained) can of corn before, with very good results.  Like the book - 'scuse me, the Food Bible - says, "This recipe is capable of wide interpretation & its proportions may be varied."  Good stuff!
