MACARONI AND CHEESE

1/2 lb elbow macaroni (1 3/4 cups uncooked)
4 c shredded cheddar cheese, divided
1 (12 oz) can evaporated milk
1 1/2 c milk (fat free ok)
2 eggs
1 tsp salt
1/2 tsp black pepper

Coat the inside of the slow cooker with cooking spray.  In a large bowl, beat eggs with the fresh and evaporated milks.  Mix in UNCOOKED macaroni and 3 C of the shredded cheese.  Add salt and pepper. Transfer to slow cooker and sprinkle with remaining 1 C of cheese.  Cover & cook on low for 5 to 6 hrs.  DO NOT STIR OR REMOVE LID WHILE COOKING!!
