Miracle Whip Cake

This cake has been a staple in my family since the 1940s. I don't know where the recipe came from originally but my mom got it from one of her future sisters in law. It is the chocolate cake of choice in our household.

Miracle Whip Cake

Preheat oven to 350 degrees. For enough batter for a 2 layer, 8 inch cake, use the first column (1 C. Miracle Whip, 1 C. sugar and down), for enough batter for 9 x 13 sheet cake, use the middle column and for a lot of batter (a sheet cake and enough for some cupcakes) use the last column.

In a large bowl, mix:

     Miracle Whip Salad Dressing      1C.      1 1/2 C.        2 Cups      
     Sugar                                   1C.         1 1/2 C.           2 Cups


Into another bowl, sift together:

     Flour                  2 C.            3 C.            4 Cups
     Cocoa               4 T.            6 T.            8 Tablespoons
     Salt                   1/2 t.      3/4 t.      1 teaspoon
     Baking powder  1 t.            1 1/2 t.      2 teaspoons

In a cup, mix:

     Warm water      1 C.         1 1/2 C.             2 Cups
     Baking Soda      2 t.         3 t.                     4 teaspoons
     Vanilla            1 t.         1 1/2 t.             2 teaspoons
     
     Add approximately one third of the water mixture to the Miracle Whip/Sugar mixture.  Mix it in by hand.  Add one third of the flour mixture.  Mix it in.  Repeat until all the flour mixture and water mixture have been blended in. Beat by hand for 1 minute.  (You can use an electric mixer but it is easy to overbeat.)  Pour into greased and floured pans and bake.  8 inch rounds: 25 to 30 minutes.  Sheet cake: 30 to 35 minutes.  Cupcakes: 15 to 20 minutes.

Hey Penth - since you have "soda" in the wet mix, I assume you mean soda pop? Does it matter what kind?

Why not? LOL That is what I get for posting the recipe directly from my cookbook with the "shorthand" ingredients. I KNOW that it means baking soda.  Grin Thanks for catching it.

It is! And it is the "traditional" birthday cake in our family. I always wanted one for my birthday and now my girls always want it too. Sometimes with chocolate frosting which really causes a chocolate high!!
