Morning.

Happy Thanksgiving to all of my fellow Canadians out there! I hope no one overloads on turkey! Cheesy

Happy Columbus Day to all Americans out there... Yep it's a long weekend in both countries!

Hubby is working the day time today, Son is home from school (ETA: NO SCHOOL, national/statutory holiday) and I'm doing my usual routine but between getting things ready for supper. I have stuffing to make and the chicken to prep (the guys do not care for turkey) so I won't be answering/replying as quick as I normally do... I'll be working on NR in between things also, that dratted scene at the end of Chapter 38 is giving me a bit of grief and it's driving me bonkers!

Coffee and catch up time.......

The stuffing/dressing is just about ready to be put into the fridge until it's time to bake it. The house smells GOOD right now! LOL

The herb and spice rub for the chicken is done too. I'm now trying to decide what's next. I can't prep the chicken until the chicken legs I pulled out of the freezer last night are done defrosting so I'll let that part go until later... They will probably be ready around 2 or so I think... I HOPE. I'll wait to cut up the onions and garlic to go into the pan with it, that will only take a few seconds to do.

Debating on whether to roast the carrots with the chicken or not... Hmmm.........

I'm going to put the chicken into the oven shortly, it's a big one so it needs a little extra time to roast. I decided to put the carrots around it so they can cook that way and it'll be one less thing to worry about... LOL

My mom did that too. She'd have the stuffing/dressing ready, the turkey cooked overnight and other things prepped so she didn't go fully crazy on Thanksgiving.

Years ago, we'd always have a crowd... My grandmother's brothers and sisters, the five of us, my aunt and uncle and my two cousins. The house was always filled to the brim! Later on, we started going to Nanny's (or we'd just help her when we were living there) and her house was packed too... It would be the six of us (my parents and brothers in law and us), Nanny, and at least three or four of the cousins from Massachusetts! LOL

Nowadays it's only the three of us. Everyone stays at their place on Thanksgiving. In some ways, it's nicer, in others, not so much. But since my family lives over an hour away, it's easier to do things like this.

Plus you KNOW I'd have my sister shot within a few minutes once her big YAP started flapping.... Smiley

Things are going to get nutso in about 20 minutes or so, the chicken is almost done.... The stuffing/dressing is done and I have veggies to cook and potatoes to whiz up.

Hubby informed me that he wants to call his family in the States soon so I'll be heading offline for the night shortly, that's going to be a long call, thank the gods for LONG DISTANCE PLANS!!! Plus I want to call my mom and wish her a Happy Thanksgiving. That's if I don't shoot my sister over the phone lines first....... Heh.
